To make a Poke Cake, first place a pan on the stove with water.
Add the butter and stir it together.
Add a little more water if it seems too thick.
Cook for a minute, then add the flour and stir until combined.
Add in the milk, coconut, sugar, and salt.
Cook until the batter is smooth.
The batter will be thin, so add a little water to thin it out.
Turn the heat up to medium and add the eggs.
Cook them for one minute, stirring constantly.
Add half the coconut milk and stir to combine.
Add more milk if it is too thick and continue cooking until it is thickened.
Add some cinnamon and vanilla.
Add another 1/2 cup of the batter and stir again.
Once the batter has thickened, turn the heat down to medium-low and cook for another minute.
Turn off the heat and let it cool for about 15 minutes.
The cake should be completely thawed and the coconut will be soft.
Place the Poke Cake on a tray and cover with a lid.
Chill for at least 10 minutes before serving.
If your coconut poke needs more time to thaw, you can use an ice cube tray or a cake pan to transfer it.
